Calcium 5'-Ribonucleotide is a mixture of calcium 5'-inosinate, calcium 5'-guanylate, calcium 5'-cytidylate, and calcium 5'-uridylate, or is a mixture of calcium 5'-inosinate and calcium 5'-guanylate. when calculated on the anhydrous basis, contains 97.0-102.0% of calcium 5'-ribonucleotide, and not less than 95.0% of the calcium 5'-ribonucleotide consists of calcium 5'-inosinate and calcium 5'-guanylate. It can be used as food additives,flavor enhancer. Ribonucleotide disodium is not stable in hot water or is degraded by phosphatase when stored in fresh food or long time. However calcium ribonucleotide can avoid these deficits though it has low soluble content in water. It is widely used in meat, fish canned food.
